This Mexican-style dish is more like an appetizer or snack, rather than main dish, but you could eat it as a main dish if you wanted to.
Recipe: Tostado Beef Casserole
Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 1 (15 oz) can tomato sauce
- 1 envelope taco seasoning
- Tortilla chips
- 1 (15 1/2 oz) can re-fried beans
- 1 cup shredded extra-sharp cheddar cheese
Instructions:
- Saute beef and onions until browned.
- Add 1 1/2 cup tomato sauce and taco seasoning, stirring to mix.
- Line bottom of a 9×19 pan with the tortilla chips.
- Spoon meat mixture over chips.
- Combine remaining tomato sauce with re-fried beans and spread over meat mixture.
- Bake in a preheated 375° oven for 25-30 minutes.
- Sprinkle top with crushed chips and cheddar cheese and bake in oven just until cheese is melted.
