The BEST Gluten-Free Waffles

I had a different post planned for today, and I haven’t posted a recipe in a long while, but I HAD to share this recipe with my gluten-free readers.


Here’s the back story: Recently, we watched an episode of Master Chef and one of the challenges required the contestants to make a ramped-up version of chicken and waffles. This piqued Andrew’s interest and he asked me to make it, too.

Well, I’ve tried a few gluten-free pancake recipes that were “just okay” so I was leery about making waffles. However, I went ahead and started poking around online for a recipe. Lo and behold, I came across this King Arthur pancake/waffle recipe. I had all the ingredients on hand, and even had the King Arthur brand of gluten-free flour in my pantry.

I followed the waffle directions exactly, including the 15 minute wait time, and oh my goodness, the waffles were PERFECT! Seriously, they are THE BEST waffle recipe I have tried so far. Andrew didn’t know they were gluten-free until he saw me making one for myself.

Whether you are gluten-free or not, I highly recommend you try these waffles. (Heads up, though, they do require xanthium gum, so you may want to purchase some before trying this recipe. I suppose you can try it without the xanthium gum but I imagine that the texture and fluffiness of the recipe may be affected.)
