This is a quick and easy recipe that is a perfect meatless meal for Lent (or any time!):
Recipe: Beans and Macaroni
Ingredients:
- 1 pound elbow macaroni, cooked according to package directions
- 1 10 oz can tomato sauce
- 1 10 oz can cannelloni beans
- 3 cloves garlic, sliced thin
- olive oil
- basil, salt and pepper to taste
Directions:
- Line medium saute pan with oil and saute garlic until translucent.
- Add the rest of the ingredients and stir.
- Simmer together for about 1/2 hour.
- Add to cooked macaroni and stir to coat/combine.
- Serve with salad and/or crusty bread.

I agree, Lent is FLYING by! But then, as I get older, time in general seems to be going by much faster. 🙂
Another delicious sounding recipe. You could use black beans and Mexican type seasoning and have a totally different take with almost the same ingredients. This would really appeal to my husband.
